Rasa: Six Flavors

Sweet (Earth and Water): Foods like sugar, milk, rice, wheat, dates, maple syrup, and licorice are intensely sweet. This taste, composed of the elements of water and earth, possesses oily, cooling, and heavy characteristics. When used in moderation, it promotes health; nourishing plasma, blood, muscles, fat, bones, marrow, and reproductive tissues. Proper use leads to endurance and longevity. However, excessive use, especially by raising Kapha, can cause colds, congestion, heaviness, loss of appetite, and obesity.

Sour (Earth and Fire): Sour taste is found in citrus fruits, kefir, yogurt, vinegar, cheese, and fermented foods. Sour foods are liquid, light, warming, and oily in nature, and when used in moderation, they are refreshing, appetite-stimulating, improve digestion, energize the body, and enlighten the mind. However, excessive use can cause hyperacidity, heartburn, acid indigestion, and ulcers. Sour taste, due to its fermentation properties, has a toxic effect on the blood, causing skin conditions such as dermatitis, acne, eczema, boils, and psoriasis.

Salty (Water and Fire): Sea and rock salt, and seaweed are examples of salty taste. It is dense, warming, heavy, oily, and water-retaining, representing the elements of water and fire. When used in moderation, it relaxes Vata and increases Kapha and Pitta. Like sweet and sour tastes, it is anabolic, or tissue-building; it stimulates saliva secretion, enhances the taste of food, and aids digestion, absorption, and waste removal. Excessive salt consumption increases Pitta and Kapha, thickening the blood and causing hypertension, fainting, wrinkles, and baldness. Due to its hydrophilic nature, it can cause water retention and edema in the body.

Bitter (Air and Fire): Bitter taste is found in foods such as red peppers, chili, onions, radishes, garlic, mustard, and ginger. It is composed of the elements of fire and air. It has mild, drying, and warming properties, calming Kapha but elevating Vata and Pitta. When used in moderation, it aids digestion and absorption, clears sinuses, improves circulation, and relieves congestion. Excessive use can lead to sexual dysfunction, burning, choking sensations, fainting, exhaustion, heartburn, and peptic ulcers.

Astringent (Air and Space): Examples of astringent flavors include turmeric, bitter melon, dandelion root, fenugreek, sandalwood, rhubarb, and coffee. Perhaps the reason coffee is so popular in modern diets is because this flavor isn’t commonly found here. It is composed of the elements of air and space. With its cool, mild, and dry properties, it reduces fever and maintains skin and muscle firmness. It is anti-toxic and kills bacteria. Due to its drying effect on the system, it causes a decrease in fat, bone marrow, urine, and stool. Excessive use causes extreme dryness and stiffness, extreme weakness and fatigue.

Bitter (Air and Earth): Examples of this taste include unripe bananas, pomegranates, legumes, okra, root garlic, and turmeric. It creates a feeling of dryness and congestion in the throat, is composed of air and earth elements, and has cooling, drying, and heavy properties. When used in moderation, it relaxes Pitta and Kapha but increases Vata. This taste absorbs water, causes dryness in the mouth, makes speaking difficult, and causes constipation. Excessive use causes a feeling of congestion, severe constipation, heart spasms, and circulatory blockages. It can also cause extreme weakness, seizures (convulsions), stroke, paralysis, and other Vata-related neuromuscular disorders.
